- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion, carrots, and celery to the pot. Cook for 5-7 minutes, until the vegetables have softened.
- Stir in the minced garlic, lentils, vegetable broth, thyme, and oregano. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until the lentils are tender.
- Taste and adjust seasonings as needed. Serve hot.
