  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 4 cloves garlic minced
  • 1 cup 200g brown or green lentils, picked over and rinsed
  • 6 cups 1.4 liters vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion, carrots, and celery to the pot. Cook for 5-7 minutes, until the vegetables have softened.
  3. Stir in the minced garlic, lentils, vegetable broth, thyme, and oregano. Season with salt and pepper to taste.
  4. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until the lentils are tender.
