Instructions
 

  • Prepare the Apple Filling:
    In a medium saucepan, combine the diced apples, brown sugar, granulated sugar, ground cinnamon, nutmeg, lemon juice, and cornstarch.
  • Cook over medium heat, stirring occasionally, until the apples soften and the mixture thickens (about 5-7 minutes).
  • Remove from heat and let the filling cool slightly.
  • Assemble the Egg Rolls:
    Lay an egg roll wrapper flat on a clean surface with one corner pointing toward you.
  • Spoon 2-3 tablespoons of the apple filling onto the center of the wrapper.
  • Fold the sides of the wrapper in, then roll tightly from the bottom up to enclose the filling. Seal the edges with a bit of beaten egg.
  • Fry the Egg Rolls:
    Heat about 2-3 cups of vegetable oil in a large frying pan or deep fryer over medium-high heat. The oil should be around 350°F (175°C).
  • Carefully place the egg rolls in the hot oil, a few at a time, ensuring they are not overcrowded.
  • Fry the egg rolls for 3-4 minutes, turning occasionally until golden brown and crispy.
  • Drain and Cool:
