Ingredients
  

  • 3/4 cup 150g granulated sugar
  • 1/4 cup 30g cornstarch
  • 1/2 teaspoon salt
  • 4 cups 960ml whole milk
  • 6 large egg yolks
  • 2 teaspoons vanilla extract
  • 45 vanilla wafer cookies
  • 4 ripe bananas peeled and sliced
  • 1/2 cup 120ml heavy cream
  • 2 tablespoons powdered sugar

For Garnish:

  • Additional banana slices
  • Crushed vanilla wafers

Instructions
 

Prepare the Pudding Base:

  • In a medium saucepan, whisk together sugar, cornstarch, and salt.
  • Gradually whisk in milk until smooth.
  • Place the saucepan over medium heat, stirring constantly until the mixture thickens and comes to a boil, about 10-12 minutes.
  • Once boiling, continue to cook and stir for an additional 2 minutes until thickened.
  • Remove the saucepan from heat.

Temper the Eggs:

  • In a separate bowl, lightly beat the egg yolks.
  • Gradually whisk about 1 cup of the hot milk mixture into the egg yolks to temper them.
  • Pour the tempered egg mixture back into the saucepan with the remaining milk mixture, whisking constantly.

Finish the Pudding:

  • Return the saucepan to medium heat and cook, stirring constantly, until the mixture thickens and reaches a pudding-like consistency, about 2-3 minutes.
  • Remove from heat and stir in vanilla extract.
  • Transfer the pudding to a large bowl and press plastic wrap directly onto the surface to prevent a skin from forming.
  • Chill in the refrigerator for at least 4 hours or until cold.

Assemble the Banana Pudding:

  • In a trifle dish or a 2-quart serving dish, layer half of the vanilla wafers on the bottom.
  • Top with half of the sliced bananas.
  • Spread half of the chilled pudding over the bananas.
  • Repeat layers with remaining wafers, bananas, and pudding.

Prepare the Whipped Cream:

  • In a medium bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  • Spread the whipped cream over the top of the pudding.
