  • 1 cup 150g all-purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup 120ml milk
  • 1/3 cup 80g unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups 300ml boiling water
  • Vanilla ice cream or whipped cream for serving (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a baking dish or ovenproof skillet with butter or non-stick spray.
  • In a mixing bowl, combine the light brown sugar, all-purpose flour, baking powder, and a pinch of salt. Stir well to combine.
  • In a separate bowl, whisk together the milk, melted unsalted butter, egg, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  • Spread the batter evenly into the prepared baking dish or skillet.
  • Sprinkle the remaining brown sugar evenly over the batter in the dish.
  • Carefully pour the boiling water over the batter and brown sugar. Do not stir.
  • Place the baking dish or skillet in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the pudding is set.
